Class Description

In this cooking class Riccardo is going to show you how to make tortellini from scratch. You’ll be guided in the process of shaping one tortellino at a time by hand, that’s a magic moment. You’ll learn how to make the dough, what goes into the traditional tortellini’s filling, and how to roll the Sfoglia (pasta sheet) to the perfect thickness to make tortellini. Riccardo will show you the way he learnt to close the tortellini, it took kilos and kilos of flour before he learned how to master a perfect tortellino. He will also tell you the story behind the birth of tortellini, that is very particular. So in two hours of class you will learn one of the.. perhaps the most famous filled pasta. Ingredients

For the pasta:

  • 200 grams (1.57 cup) Soft Wheat Flour Type 00 (Cake Flour or All Purpose Flour)
  • 2 Large eggs

For the filling:

  • 50 grams (1,8 oz) Boneless Pork Loin Roasts
  • 50 grams (1,8 oz) Prosciutto crudo (cured ham, one thick slice or cubes)
  • 50 grams (1,8 oz) Mortadella (one thick slice or cubes)
  • 50 grams (½ cup) Parmigiano Reggiano, finely grated
  • 1 Egg
  • 1 tsp Nutmeg

For the sauce:

  • 200 ml (0,87) Fresh liquid cream
  • 100 grams (1 cup) Parmigiano Reggiano, finely grated
