Class Description

One of the icons of traditional Napolitan pastry is the Torta Caprese. From the island of Capri, where it was born, to the Amalfi Coast, the Caprese torte is the most popular dessert in pastry shops.

In this cooking class, we’ll walk all the way through the steps of making this delicious dessert. Almond and chocolate-based with the total absence of gluten is the perfect dessert for anyone. This torte is the perfect idea for an Italian breakfast, a sweet snack, or after meals.

For the torte:

Fist bowl:

  • 170 grams (0,75 cup) Butter at room temperature (keep it at least 2 hours out of the fridge before the class starts)
  • 85 grams (0,74 cup) Powdered sugar (Icing sugar)
  • 85 grams (about 6 eggs) Egg yolks at room temperature
  • ½ Vanilla bean
  • Salt to taste

Second bowl:

  • 170 grams (1,29 cup) Dark chocolate for grating
  • 170 grams (1,77 cup) Almond flour or Peeled almonds (to be ground into powder)
  • 25 grams (3,3 tbsp) Cornstarch
  • 14 grams (1,9 tbsp) Bitter cocoa powder
  • 4 grams (1 tsp) Baking powder

Third bowl:

  • 148 grams (about 6 eggs) Egg whites at room temperature
  • 85 grams (0,74 cup) Powdered sugar (Icing sugar)
  • Powdered sugar to decorate
  • Butter for the baking pan
