Class Description

In this cooking class I will teach you how to make Profiteroles, my brother's favorite dessert. Any knowledge of pastry is not necessary to be able to participate in the class, I will guide you in all the steps for the success of a delicious dessert. We will start by preparing the choux, soft balls of dough that we will bake in the oven, then we will prepare the filling of chantilly cream that we will place in a pastry bag to fill the choux and we will finish the dessert with the preparation of the chocolate coating. Once the dessert has rested in the fridge, it will be ready to be served!

Ingredients

For the choux pastry:

  • 125 grams (½ cup) Water
  • 75 grams (0,6 cup) Soft Wheat Flour Type 00 (Cake flour)
  • 50 grams (3,5 tbsp) Butter
  • 10 grams (2,4 tsp) Sugar
  • 2 Large eggs
  • Salt

 

  • 1 Yolk
  • Water

 

For the chantilly cream:

  • 250 grams (1 cup) Fresh liquid cream (35% fat)
  • 50 grams (0,4 cup) Icing sugar
  • 1 Vanilla bean

 

For the chocolate coating:

  • 450 grams (3,41 cups, grated) Dark chocolate
  • 200 grams (0,85 cup) Water
  • 150 grams (0,75 grams) Granulated sugar
  • 80 grams (0,35 cup) Fresh liquid cream
  • Salt
