Pizza di Scarola is a famous recipe of Naples. Traditionally prepared during the Christmas holidays, it is possible to find it throughout the year.

Ingredients

For the pizza dough:

  • 400 grams (3,15 cups) Soft Wheat Flour Type 00 Flour
  • 200 grams (7/8 cup) Cold butter, cut into cubes
  • 140 grams (0,6 cup) Cold water
  • Salt

For the filling:

  • 800/1000 grams (30 oz approx.) Fresh escarole
  • 8 Anchovies (in oil)
  • 3 tbsp Black olives
  • 2 tbsp Raisins
  • 2 Garlic cloves
  • 1 tbsp Pine nuts
  • 1 tbsp Capers
  • Extra virgin olive oil
  • Salt
