Class Description

Maltagliati is a shape of pasta obtained from the leftovers of noble pasta like tortellini or cappelletti. This pasta has an irregular shape, in fact, the name Maltagliati means “bad cut”. In this cooking class, Riccardo will give you an idea of no waste of food. Using a not very noble pasta you will be able to make an amazing recipe.

This pasta can be seasoned with many different sauces, but swordfish, eggplant, and mint are flavors that are perfectly married together. Join the class to learn how to reuse leftovers of pasta.

Ingredients

For the pasta:

  • 200 grams (1,2 cup) Semolina flour
  • 100 grams (0,4 cup) Water

For the sauce:

  • 400 grams (14 oz) Tomato puree (passata)
  • 200 grams (7 oz) Swordfish fillet (about 1)
  • 1 Eggplant
  • 8-10 Mint leaves
  • 8-10 Parsley leaves
  • 2 tbsp Extra virgin olive oil
  • 1 Garlic clove
  • Lemon zest (optional)
