Class Description

In this cooking class, you will learn how to make potato gnocchi. This recipe is special because gnocchi is first boiled in water and then baked in the oven. To make the gnocchi you will need to use red potatoes which are rich in starch and make the dough thicker. You will also learn how to make the traditional but unique Salsa al Pomodoro or tomato sauce.

This sauce is so good, it is made by few and simple ingredients but is tremendously delicious. Tomatoes, basil, Parmigiano Reggiano, mozzarella, and garlic are the ingredients that make this recipe amazing. Join the class and learn how to make Gnocchi alla Sorrentina with Riccardo.

Ingredients

For the gnocchi dough:

  • 500 grams (about 4 large potatoes) Red potatoes
  • 200 grams (1.57 cup) Soft Wheat Flour Type 00

 

For the sauce:

  • 400 grams (14 oz) Tomato passata or Whole peeled tomatoes
  • 250 grams Fresh mozzarella (about 1 ball)
  • 50 grams (0,5 cup) Parmigiano Reggiano, finely grated
  • 10 Basil leaves
  • 2 tbsp Extra virgin olive oil
  • 1 Garlic cloves
  • Salt

Day Of Class

Wash the potatoes, do not peel them, put them in cold water (unsalted), and bring the pot to boil. After 35-40 minutes drain them off and leave to cool at room temperature.
