Class Description

Everyone loves gnocchi! But how to make potato gnocchi that doesn't dissolve in boiling water? P.Artusi back in 1890 wrote a potato recipe in his famous cookbook

Ingredients

For the gnocchi dough:

  • 500 grams (about 4 large potatoes) Red potatoes
  • 200 grams (1.57 cup) Soft Wheat Flour Type 00

For the basil pesto:

  • 50 Basil leaves
  • 30 grams ( 5 tbsp) Parmigiano Reggiano, finely grated
  • 30 grams ( 5 tbsp) Pecorino Romano, finely grated
  • 20 grams ( 2 ⅓ tbsp) Pine nuts
  • 1 Garlic clove, minced
  • Extra virgin olive oil
  • Salt
