Class Description

In this cooking class, you will learn how to make one of the most popular fresh pasta shapes. Riccardo will teach you online, over Zoom meeting, how to make Fettuccine. During the class, he will give you tips and information on the ingredients to use and which are the substitution. Using just a rolling pin, you will learn how to make a real Italian handmade pasta, the traditional Sunday pasta meal.

Moreover, he will show you how to cook and season the pasta with one of the most traditional fish sauces, shrimps, and zucchini. This sauce is very simple and quick to make so in just 90 minutes, you will be able to prepare an Italian meal by yourself with Riccardo’s instruction. Join the class and learn how to make fettuccine.

Ingredients

For the pasta:

  • 100 grams (0.8 cup) Soft Wheat Flour “Type 00” 
  • 100 grams (0.6 cup) Semolina Flour (alternatively, use only 00 flour)
  • 2 Large eggs (at room temperature)

For the sauce:

  • 150 grams Fresh shrimps or scampi
  • 2 Zucchini
  • 1 Shallot
  • 1 Garlic clove
  • ¼ cup Brandy (or white wine)
  • Extra virgin olive oil
  • Salt - Pepper
