Class Description

In this cooking class, Riccardo will show you how to make Fettuccine all'Amatriciana, a famous pasta sauce that is born in Amatrice, a small town 100km from Rome.

This sauce is very famous all around Italy and, like many famous recipes, there are different versions of it. Riccardo found the original recipe in one of his cookbooks and will share the tradition and preparation of this roman culinary masterpiece with you.

As well as the sauce in this cooking class, you will also learn how to make Fettuccine. This pasta shape is made of two flour which gives delicacy and tenacity to the dough. Join the class to know more about this recipe.

Ingredients

For the pasta:

  • 100 grams (0.8 cup) Soft Wheat Flour “Type 00”
  • 100 grams (0.6 cup) Semolina Flour (alternatively, use only 00 flour)
  • 2 Large eggs (at room temperature)

For the sauce:

  • 400 grams (14 oz) Whole Peeled Tomatoes or Tomato puree (passata)
  • 150 grams (5,3 oz) Guanciale (Pork cheek or Bacon)
  • 50 grams (½ cup) Pecorino Romano, finely grated
  • ¼ tsp Chilli pepper
