Class Description

In this cooking class, Riccardo will teach you how to make Cannelloni. A symbolic dish of the Italian Sunday lunch. 

The name cannelloni derives from "torch", the short tube that lets the water out at the mouth of the fountains.

There are many steps to do in this cooking class, such as making the pasta dough, cook the bechamel and prepare the ricotta and spinach finning. Then roll out the pasta, assemble the cannelloni and bake it. It seems difficult but with Riccardo’s instructions, it will be very easy.

Ingredients

For the pasta:

  • 300 grams (2,35 cup)  Soft wheat flour Type 00
  • 3 Large eggs

For the filling:

  • 500 grams (3,2 cup) Fresh Spinach
  • 250 grams (1 cup) Ricotta
  • 100 grams (1 cup) Parmigiano Reggiano
  • 1 Garlic clove
  • Nutmeg
  • Salt
  • Black Pepper

For the bechamel:

  • 300 ml  (1 ¼  cups) Whole milk
  • 25 grams (1.75 tbsp) Butter, cut into little cubes
  • 25 grams (3 tbsp)  Soft Wheat Flour Type 00
  • ¼ tsp fresh ground nutmeg
  • Salt

For the tomato sauce:

  • 400 grams (14 oz) Tomato passata or whole peeled tomatoes
  • 2 tbsp Extra virgin olive oil
  • 1 Sprig of basil
  • 1 Garlic clove
  • Salt to taste
